Sassy Eggs

I’m soon coming off the low carb kick start of my diet and one of the last items I wanted to prepare was deviled eggs.  I mix the yolks with a blend of equal parts mayo and horseradish sauce.  I add a pinch of curry and a couple drops of hot sauce.  Then I taste and add more ingredients accordingly. This was the first time I put the filling in a pastry bag with a decorator tip to finish the eggs.  (I need practice.)  I also forgot to put paprika on top.  Must have been nervous in front of my own camera.  Delicious with a snappy bite!DSCN0128
